Marinated Zucchini Rolls
October 19th, 2007 | by IngridThe weather has been unseasonably warm and sunny here in Budapest. In our backyard two of our summer plants sprung back to life and bore fruits. Our chili pepper plant had 5 green chilies standing tall but not mature enough to harvest. The zucchini plant gave us three nice size zucchinis, two baby zucchinis and two perfect squash blossoms. It’s October in Europe! Can this be considered a beneficial side effect of global warming?
MARINATED ZUCCHINI ROLLS
PREP: 5 Minutes + MARINATE: 60 Minutes = TOTAL: 65 Minutes
MAKES ABOUT 8-12 rolls - depending on size of zucchini
As an appetizer, this makes a simple and healthy prelude to any meal or enjoy it as a light meal itself. Pictured here is an appetizer plate with Zucchini Rolls, Tomatoes and Carrot Jam.
1 Lime, juice
1 tablespoon cold pressed extra virgin olive oil
1 Garlic clove,
Sea salt and pepper, to taste
Mix together lime, olive oil, sea salt and pepper. Place zucchini stripes in marinate. Let marinate for an hour or overnight.
Roll zucchinis as is or layer with filling of choice and roll. Secure with toothpick, optional
